Watermelon skin chutney
METHOD:
Peel the outer green part of Watermelon and take only the skin of the fruit.wash and clean and chopped into pieces.
Heat a pan add some oil,add onion,tomatoes, ginger,red chilli,watermelon pieces,salt sorted well nicely until all the ingredients cooked soft.
Finally add coriander or mint or curry leaves (Any 1 can be used) sorted for few minutes and allow the mixture to cool down completely.
In a mixer jar add all the sorted ingredients by adding little water and grind into smooth paste.
For Tempering,Heat a pan add some oil,add mustard seeds,urad dhal, curry leaves gets splutter and pour into the chutney.

Cook List:
Watermelon skin pieces-1 cup
Oil-amt as required
Onion-3 nos
Tomatoes-2 nos
Ginger-1 inch
Red chilli-4 nos
Salt-amt as needed
Coriander leaves few
For Tempering:
Oil-1 tsp
Mustard seeds-1 tsp
Urad dal-1/2 tsp
Curry leaves few

Beetroot Paneer Burfi
METHOD:
STEP 1:
In a mixer jar,add elachi,sugar and grind into fine powder and keep aside.
STEP 2:
In a mixer jar, add crumbled paneer,2 slice of Beetroot
grind well nicely.
PROCESS:
Heat a pan add some ghee,add the grinded paneer-Beetroot mixture saute well nicely in medium flame.
Then add powdered sugar mix well continuosly and cook till it becomes dry.(moisture should not be there).
Allow the mixture to cool down completely and make any desired shape you like or spread the mixture evenly in a greased ghee plate and keep in fridge for half an hour and cut into burfi pieces

Sugar-1/4 cup

Drumstick soup
In a hot water add the Drumstick pieces and boil for 10 minutes.Allow it to cool down completely and remove the pulp from inside and keep.
Heat a pan add 2tsp of Butter,add garlic, chopped onion saute for few minutes and turn off the flame.
In a Pressure cooker,add yellow Moongdal, sauted ingredients,add sufficient amount of water and pressure cook for 2 whistles.
Allow the mixture to cool down completely.
In a mixer jar,add the dhal Mixture, Drumstick pulp just grind 1 turn.
Heat a pan add the grinded Mixture,add salt, turmeric powder and add water according to your soup consistency and allowed to boil for 1 minute.
Finally add pepper powder mix well and serve hot the healthy soup.

Garlic-7 to 8 nos

Turmeric powder-1/2 tsp
Pepper Powder-2 tsp.
